Blueberry Biscotti

Ingredients

  • ½ cup softened butter, ¼ cup stevia
  • 2 eggs, orange zest, salt
  • 2 cups whole wheat flour, 1½ tablespoons baking powder
  • Dark chocolate pieces, 1 cup fresh blueberries
  • ½ cup walnuts and almonds, 2 tablespoons coconut milk

Preparation

Preheat oven to 350°F. Beat butter with orange zest, stevia, coconut milk and salt. Add eggs, flour, baking powder. Blend blueberries with almond flour briefly. Add chopped nuts. Form long strips on baking sheet, bake 35-40 minutes. Slice, bake again 15-20 minutes until crispy. Drizzle with melted dark chocolate.

Chocolate Truffles

Ingredients

  • 12 pitted dates, ½ cup walnuts and almonds
  • ¾ cup almond flour, ¼ cup unsweetened cocoa powder
  • 1 tablespoon vanilla, ½ tablespoon salt
  • Cocoa, chopped nuts and coconut flakes to decorate

Preparation

Soak dates in hot water to soften. Blend walnuts, almonds and cocoa until finely ground. Add dates, vanilla and salt until a thick dough forms. Roll into balls, coat with coconut, nuts or cocoa. Refrigerate for an hour.

Pecan Pie Bars

Ingredients

  • Crust: 2 cups almond flour, 4 tbsp maple syrup, 4 tbsp melted butter, 1 tbsp vanilla, ¼ tbsp salt
  • Filling: ½ cup melted butter, monkfruit, 4 tbsp maple syrup, ¼ cup coconut milk, 1 tbsp vanilla, 2 eggs, 2 cups chopped walnuts

Preparation

Preheat oven to 350°F. Mix crust ingredients, press onto baking sheet, bake 20-22 minutes until golden. Mix filling ingredients, pour over crust, bake 30 more minutes. Cool, cut into bars, add a pinch of salt to serve.

Olive and Mozzarella Penguins

Ingredients

  • 30 pitted black olives, 15 mozzarella cheese balls
  • Chopped carrots for beak and legs, wooden toothpicks

Preparation

Place a large olive with hole facing forward, insert carrot piece as beak. Attach to mozzarella ball with toothpick for the head. Add carrot halves below for legs. Cut olive halves for fins. Fun to make with kids!
