4 Seasonal Recipes for January

Roasted Brussels Sprouts and Sweet Potatoes

Ingredients

  • 2 pounds Brussels sprouts, cut in half
  • 1 large sweet potato, peeled and cut into cubes
  • 3 tablespoons avocado oil
  • 1 tablespoon each: cumin, paprika, grain salt, ground pepper
  • ¼ tablespoon cayenne pepper
  • Juice of 1 lemon

Preparation

Preheat the oven to 450°F. In a baking tray add the cabbage and chopped sweet potato, bathe them with the avocado oil and season with the spices. Stir well and put in the oven for 20-25 minutes or until cooked and golden. Bathe with lemon juice and serve.

Asparagus Cream

Ingredients

  • 2 bunches of green asparagus
  • 2 leeks, 1 carrot, ½ stalk celery
  • 1 pre-cooked potato, 2 slices peeled ginger
  • Juice of ½ lemon, 1 liter chicken broth
  • 30 ml coconut milk, oregano, salt, pepper, garlic powder, avocado oil

Preparation

Preheat oven to 390°F. Roast asparagus with oil and spices for 15 minutes. In a pot, sauté leeks, carrot, celery and oregano, add broth, ginger and lemon juice. Cook 15 minutes. Add asparagus and potato, blend everything, return to pot and boil a few minutes. Serve with reserved asparagus tips.

Chai with Chocolate and Vanilla

Ingredients

  • 1½ cups coconut milk, 2 chai bags, 1 star anise
  • ½ tablespoon cinnamon, ¼ tablespoon ginger, cardamom
  • 1 tablespoon unsweetened cocoa powder, dark chocolate pieces
  • Monkfruit powder, 1 tablespoon vanilla, grated dark chocolate

Preparation

Heat coconut milk, add chai bags and anise, let rest 10 minutes. Remove bags, add spices, cocoa, and monkfruit. Heat again, add vanilla before boiling. Serve over dark chocolate pieces in a cup, top with cinnamon and grated chocolate.

Banana Bread with Chocolate (Microwave)

Ingredients

  • 1 ripe banana (mashed), 1 tablespoon melted butter
  • 1 tablespoon maple syrup, 1 egg, 1 tablespoon vanilla
  • ¼ cup oat flour, ½ tablespoon baking soda
  • ½ tablespoon cinnamon, ¼ teaspoon salt, dark chocolate pieces

Preparation

Mix mashed banana, butter, maple syrup, egg and vanilla. Add flour, baking soda, cinnamon, salt, and chocolate pieces. Pour into a microwave-safe cup, heat for 2 minutes. Let cool, add maple syrup and enjoy!
