
3 Summer Snacks
Having a healthy diet is one of the main ways to help us stay healthy during summer. Here are three refreshing and delicious snack recipes perfect for hot days!
Strawberry Coconut Milk
Ingredients
- 300 grams of frozen strawberries in pieces
- ½ cup coconut milk
- Juice of 1 lemon
- ½ tablespoon vanilla
- ½ tablespoon stevia
Preparation
In the blender, empty the milk with the frozen strawberries, add the lemon juice, vanilla, stevia and blend. You'll obtain a creamy consistency, then empty it into a bowl and put it in the freezer for approximately 1 hour. To serve, take it out and leave it outside for 5-10 minutes so it softens and you can serve scoops on a plate or cone.
Jelly with Fruit
Ingredients
- Jelly mold, wax paper
- Kiwi, strawberries, raspberries, blueberries in pieces
- 1 liter of water
- 1 envelope sugar-free strawberry jelly
Preparation
Place wax paper at the bottom of the mold, add fruit pieces to taste. Heat water in a pot over low heat, when it boils add the jelly envelope, heat for 2 minutes and turn off. Let cool a few minutes and pour into the mold until fruit is covered. Cover and refrigerate for approximately 1 hour. Unmold, cut into slices and enjoy!
Fruit Roll Ups
Ingredients
- 3 cups chopped strawberries
- ¼ cup monk fruit or stevia
- ¼ cup Tajín chili powder
- Juice of 3 lemons
- Baking pan and wax paper
Preparation
Blend the strawberries, chili powder, sweetener and lemon juice. Extend wax paper on the baking pan, pour the mixture and spread into a thin layer. Preheat oven to 80°C (175°F) and bake for 6 hours. Remove when the mixture is dry, cut in half, then roll up along with wax paper. Cut to desired thickness with scissors or a knife and enjoy!
